Brie is usually know as a "picnic type" of cheese. We've taken that, melted it down and used is as a gooey filling for our pastry. We've mixed this bold cheese with sweet apples and tart cranberries and then baked it into a flaky pastry.
We've added vanilla beans to the pastry to give it that sweet flavor that vanilla never fails to give. Also, the bean adds little charming flecks that make this pastry even more unique.
This recipe is so warm and gooey. It has such a wonderful apple-pie-like smell. It will fill your house with a wonderful baking aroma. It's perfect for the upcoming holiday season. Everything about it warms the soul!

Our Vanilla Apple Bread Pudding recipe is a classic bread pudding with all the flavors of fall. We put a small Rodelle spin on the traditional bread pudding and used freshly sliced apples and our Rodelle Vanilla Beans.
