Ingredients
Fish
- 6 thin white fish fillets
- 1 cup flour
- 2/3 cup corn meal
- 1 lime, juiced
- 1 tbsp Rodelle Baja Spice Blend
- 6 corn tortillas, heated over burner
Avocado sauce
- 1 avocado
- 1 tbsp mayonnaise
- 3 tbsp sour cream
- ½ lime, juiced
- 1 tbsp cilantro
- ½ tsp salt
Slaw
- 1 cup shredded slaw mix
- 1 tsp Rodelle Baja Spice Blend
- ¼ cup EVOO (extra virgin olive oil)
- ½ lime, juiced
- ½ tsp salt

How to cook: Fish
- Mix in the Rodelle Baja Spice Blend to the flour
- Put the flour mixture, cornmeal, and lime juice onto 3 separate plates for dredging
- Heat oil in heavy fry pan
- Dredge the fish fillets in this order: flour, lime, cornmeal
- Carefully drop the coated fish in the heated oil. Fry for 1 minute on one side, turn and fry until golden brown (about 90 seconds or so, to cook through. Longer if fillet’s are thick)
- Remove to a dish lined with paper towels to drain
How to Prepare: Avocado sauce
- Rough chop the ingredients and put in a blender and blend until all is well mixed. Should be thick, very creamy and pourable. Add more lime juice if too thick.
How to make: Slaw dressing
- Whisk the ingredients together and toss into slaw.
