Sometimes you want the rich, fudgy flavor of a brownie, but in a convenient, handheld cookie form (so you can travel more easily with it and drink coffee on the road, if you know what I mean). These Gooey Chocolate Brownie Cookies are the answer! Rich, fudgy, and intensely chocolatey, they combine the best elements of a classic brownie with the convenience of a cookie. Great for sharing, baking in a full batch means you’ll have plenty to go around, whether it’s for a party, a holiday gathering, or just keeping a tray on hand for spontaneous chocolate cravings.

The magic of these cookies lies in their texture. The edges are slightly crisp, giving just enough bite, while the centers stay soft, chewy, and gooey, almost like a brownie straight from the pan. High-quality cocoa like Rodelle Dutch-Processed Gourmet Baking Cocoa and chocolate chunks, maybe even play around with Rodelle Organic Chocolate Extract, amplify the chocolate flavor, creating a deep, decadent taste in every bite. A pinch of salt balances the sweetness and highlights the richness of the chocolate, making these cookies feel a bit more indulgent without being overwhelming.

This recipe is easy to follow, too. With pantry staples like butter, sugar, eggs, flour, and baking cocoa, you can mix up a tray of cookies that bakes quickly and reliably. The batter comes together in just a few minutes, and the baking time ensures a perfectly gooey interior while forming those lightly crisp edges.

One of the cool things about these chocolate brownie cookies is their versatility. They’re delicious on their own, but can also be dressed up in countless ways. Try adding a swirl of peanut butter, a sprinkle of chocolate chips, or a dusting of powdered sugar for a fun presentation. Serve them warm with a scoop of ice cream for an extra indulgent treat, or let them cool slightly for a firmer, yet still soft, bite.

Whether you’re a chocolate lover, a fan of chewy cookies, or just someone who can never have enough desserts on hand, these Gooey Chocolate Brownie Cookies are a must-bake. A full batch ensures you’ll have plenty to share and enjoy, while still delivering the fudgy, melt-in-your-mouth texture that makes brownies so irresistible. They’re proof that cookies can be indulgent, comforting, and perfectly chocolatey all at once.
