Pour oil into a large heavy bottomed pot fitted with a thermometer. Heat oil up to 350F
Place a cooling rack on a baking sheet lined with aluminum foil and set aside
Whisk flour and cuban bbq in a medium sized bowl
Toss wings into flour mixture one at a time, completely covering wings in mixture
Once oil is heated up, place wings in oil 4-5 at a time for 5-8 minutes, or until the outside of the wings have turned golden brown. Maintain oil temperature at 350F
After wings come out of the oil, sprinkle with extra cuban bbq seasoning
Cook the rest of the wings in batches, setting cooked wings aside on cooling rack
Create the mojo sauce while wings slightly cool
Serve immediately with fresh mojo sauce
Mojo Sauce:
Blend all ingredients in a blender until mostly smooth but still specked with herbs. Transfer sauce to a medium bowl.
