A fresh delicious Greek pasta salad made with orzo pasta, red bell peppers, onion, feta, green olives, and is mixed with a tasty homemade Greek salad dressing that’s a bit tangy and garlicy. This makes a large serving of pasta salad which is great for parties or family gatherings. FYI, you won’t have any leftovers if you bring to a party, it’s THAT good! 

Ingredients

For the Dressing:

  • ½ cup extra virgin olive oil 
  • ¼ cup Knwble Grwn Flax Seed Oil 
  • 2 tablespoons red wine vinegar 
  • 1 clove garlic, minced 
  • 1 tablespoon Rodelle Greek Seasoning 
  • 2 tablespoons of lemon juice (about ½ lemon) - fresh squeezed preferred 

For the Salad:

  • 1lb orzo, cooked according to the directions on the box, and cooled 
  • 1 red bell pepper, diced 
  • ½ red onion, diced 
  • 1 cup crumbled feta 
  • 1 cup green olives 
  • Rodelle Greek Salad dressing 
  • 1/3 cup sliced almonds (optional)

For the Dressing: 

  1. Put all ingredients into a blender/food processor and mix until combined 
  2. Store for up to 2 weeks in an airtight container in the fridge 
  3. **Separation is natural, shake before use 

Pasta Salad Assembly:

  1. Mix all ingredients together in a bowl, ensuring all pasta is covered with dressing 

Notes: 

  • Store pasta salad in the fridge up to 4-5 days.
