Indulge in this mint chocolate ice cream shake with vanilla and vodka, topped with Peppermint Schnapps, vanilla bean whipped cream. It’s the perfect festive drink to celebrate St. Patty’s Day!

Ingredients

Cocktail Shake

  • 2 cups mint chocolate chip ice cream
  • 1/4 cup vanilla flavored vodka
  • 1 teaspoon Rodelle Vanilla Extract
  • 3-4 drops green food coloring
  • 1 teaspoon grated dark chocolate and a few sprigs of mint (for garnish)

Whipped Cream Topping for Cocktail Shake

  • 1/2 cup heavy cream
  • 1 tablespoon powdered sugar
  • 1 Rodelle Vanilla Bean, split and scraped
  • 3 tablespoons Peppermint Schnapps

OR Virgin Shake:

  • 3 cups vanilla ice cream
  • 1 1/2 cups whole milk
  • 1 teaspoon mint extract
  • 1/2 teaspoon Rodelle Vanilla Extract
  • 4-5 drops green food coloring (or more for deeper color)

Whipped Cream Topping for Virgin Shake

  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 Rodelle Vanilla Bean, scraped
  • For true authenticity, top whipped cream with a maraschino cherry

Cocktail Shake

  1. Blend cocktail ingredients in a blender (leave out garnish ingredients).
  2. Whip the cream until starting to thicken, add the sugar and vanilla bean and whip until soft peaks form.
  3. Slowly whip in the Peppermint Schnapps until firm.
  4. Pour the drink mix into a glass, top with whipped cream, sprinkle the grated chocolate on top and garnish with mint.

Virgin Shake

  1. Combine the drink ingredients in a blender until smooth and rich (adjust food coloring as needed).
  2. Whip the whipped cream ingredients together until peaks form.
  3. Top the shake with the whipped cream (and cherry if desired).
  4. Drink with a straw and eat with a spoon.
