Ingredients
- 15 apples, peeled, cored, and chopped into small cubes. Use a blend of apples for a fuller flavor.
- 1 cup cane sugar
- ½ cup brown sugar
- 2 tsp cinnamon
- 3 Rodelle Vanilla Beans, split and scraped (reserve bean pod)
- 1/2 tsp ground cloves
- 1/2 tsp salt

- Place all ingredients into a crock pot and stir to blend. Cover and cook on high for about an hour.
- Reduce heat to low, stir, and then add the reserved Rodelle Vanilla Bean pods to top of the apples.
- At this point taste the apple mixture.
- If you want it sweeter, add more sugar, but not more than 1 cup.
- Cook on low heat, stirring occasionally, until mixture is thickened and dark brown (about 10 to 11 hours).
- Carefully remove the vanilla bean pods, then using an immersion blender, blend apple mixture until smooth.
- Cook uncovered on low heat for another hour.
- Cool slightly before spooning into containers.
- Cover and refrigerate, or freeze.
