Slow-cooked apples with sugar, spices and yummy vanilla bean. Serve with scones, toast, crumpets, pork, yogurt, cheddar cheese and crackers, gingerbread, oh … the list is endless!

Ingredients
  • 15 apples, peeled, cored, and chopped into small cubes. Use a blend of apples for a fuller flavor.
  • 1 cup cane sugar
  • ½ cup brown sugar
  • 2 tsp cinnamon
  • 3 Rodelle Vanilla Beans, split and scraped (reserve bean pod)
  • 1/2 tsp ground cloves
  • 1/2 tsp salt

  1. Place all ingredients into a crock pot and stir to blend. Cover and cook on high for about an hour.
  2. Reduce heat to low, stir, and then add the reserved Rodelle Vanilla Bean pods to top of the apples.
  3. At this point taste the apple mixture.
  4. If you want it sweeter, add more sugar, but not more than 1 cup.
  5. Cook on low heat, stirring occasionally, until mixture is thickened and dark brown (about 10 to 11 hours).
  6. Carefully remove the vanilla bean pods, then using an immersion blender, blend apple mixture until smooth.
  7. Cook uncovered on low heat for another hour.
  8. Cool slightly before spooning into containers.
  9. Cover and refrigerate, or freeze.
