Sometimes you want a cookie – a SINGLE cookie and don’t want to bake a whole batch for yourself. With this idea in mind, we made a single serve funfetti cookie recipe! This cookie is buttery, thick, soft, and chewy plus fun with the added colorful sprinkles. This recipe does make three cookies so you can save the other two for the next two days – or eat them all in one sitting, which we do on the occasion cause they’re DELICIOUS! 

Ingredients
  • 3 tablespoons butter (you can use cold but we recommend room temp) 
  • 3 tablespoons light brown sugar 
  • 1 tablespoon granulated sugar 
  • 1 egg yolk 
  • ½  teaspoon Rodelle Pure Vanilla Extract 
  • ½ cup all-purpose flour 
  • 1/8 teaspoon baking soda  
  • 1/8 teaspoon salt 
  • 3 tablespoons colorful sprinkles

  1. Preheat oven to 350, and line a baking sheet with parchment paper 
  2. Beat butter and both sugars together until smooth and creamy 
  3. Add in the egg yolk and vanilla and mix to combine 
  4. Mix in flour, baking soda, and salt until just combined 
  5. Fold in sprinkles, but do not overmix 
  6. Roll the dough into 3 balls and place on prepared baking sheet 
  7. Bake for 10-15 minutes until the edges of the cookie are golden brown (leave in slightly longer for a less gooey cookie) 
  8. Remove from oven and let cool on the baking sheet for 5 minutes. Finish cooling on a cooling rack. 

Note: 

  • Cookies can be stored in an airtight container for up to 5-7 days before they start to get dry! 
  • If you are using cold butter instead of room temp, we recommend melting in microwave for about 7-10 seconds to get it a bit soft. This makes it easier to beat with the sugar if you are using a whisk.
