These cookies are soft, fluffy, and creamy with the added peanut butter and enhanced flavor with a dash of Rodelle Vanilla Extract. To top it off, the added chocolate kiss – mwah!

Ingredients
  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup granulated sugar + more for rolling
  • 1/2 cup packed light brown sugar
  • 1 cup creamy peanut butter
  • 1 egg
  • 1 teaspoon Rodelle Pure Vanilla Extract
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 36 Hershey Kisses, unwrapped

Directions
  1. Preheat oven to 375F
  2. Line a baking sheet with parchment paper.
  3. Cream butter, sugars, peanut butter, egg, and Rodelle Pure Vanilla Extract together in an electric mixer fitted with the paddle attachment. Beat until fluffy and lightened in color (about 3 minutes).
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Add the dry mix to the butter mixture beat on low speed until the dough is formed.
  6. While dough is forming, add some granulated sugar to a small bowl
  7. Once dough is formed, scoop balls with a small cookie scoop (~1 teaspoon), and roll into balls.
  8. Roll each ball in granulated sugar, and set on the prepped baking sheet a few inches apart.
  9. Bake for 8-10 minutes, checking to see cookies are golden brown on top, evenly spread out, and beginning to crack.
  10. After cookies have finished baking, transfer to a wire cooling rack and immediately place one Hershey Kiss in the center of each cookie, gently pressing to ensure they don't move.
  11. Let cookies cool to room temperature before enjoying.

Optional:

Cookies can be made without rolling in sugar. Instead, once dough has been rolled into balls, place directly onto the prepped baking sheet.
